Beyond “Just Water”: Rethinking What Lettuce Can Be

8th May 2026

Lettuce is often underestimated as a simple, watery ingredient used mainly for texture or garnish. While it is true that lettuce has a high water content, it is also naturally made up of dietary fiber and a range of micronutrients. Different varieties of leafy greens typically contain small but meaningful amounts of vitamins such as Vitamin A, which supports general cell health, Vitamin K, which plays a role in normal blood function, and folate, which is involved in daily cellular processes. Combined with its light, refreshing nature, lettuce contributes to hydration and helps add volume and balance to everyday meals without heaviness.

At De Lettuce Bear, we believe the value of greens starts long before they reach the plate. Our lettuce is grown in a controlled indoor vertical farming environment, where factors like light, temperature, and nutrients are carefully managed throughout the growing process. This approach helps ensure consistent quality, cleanliness, and year-round freshness without reliance on pesticides or unpredictable outdoor conditions.

Beyond farming methods, we also focus on nutritional enhancement through selenium biofortification. Our lettuce contains up to 10x more selenium compared to conventional vegetables. Instead of changing the identity of lettuce, this process enhances what already exists in nature by enriching it with an essential trace mineral that contributes to a more nutrient-conscious diet.

Ultimately, it’s about shifting perspective — from seeing lettuce as a basic side ingredient to recognising it as thoughtfully grown greens that combine nature and modern farming innovation.
